Pumpkin Bread

A lot of people claim to not like pumpkin flavored things, but I think they’re usually just too scared to try it. It’s sort of an acquired taste, but I think once you give it a try (especially in the form of this bread), it’s hard not to like it. This bread is pretty easy to put together and turns out to be super moist and flavorful. Also, the cinnamon, nutmeg, and ginger in the batter will make your house smell amazing. It’s a great little treat for cold winter nights :)

Pumpkin Bread

makes 1 loaf (9 inch pan)

Ingredients

3/4 cup brown sugar
1/2 cup white sugar
1/2 cup vegetable oil
2 eggs, beaten
1 cup pumpkin (8 oz)
1 3/4 cups flour
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
3/4 tsp ginger
1/3 cup water

Preheat oven to 350 degrees. Grease your loaf pan.

In a large bowl, beat brown sugar, white sugar and vegetable oil (whisking by hand works for this recipe). Add eggs and pumpkin, mix well.

In another bowl, combine the remaining dry ingredients and whisk.

Add the dry mixture to the pumpkin mixture, alternating with water. Whisk until well combined.

Pour the batter into the loaf pan. Bake until  a toothpick inserted into the center of the pan comes out clean. About 60 minutes (Mine took about 70).
